When Amsterdam residents in their twenties, Max and James, started craving the cozy atmosphere of a local brown café, they decided to build one inside their own flat. Tucked into a 2.5 by 2.5 metre corner near the washing machine on the third floor, their creation—Café Van Dissel—pays homage to Jaap van Dissel, director of the RIVM.

Strict House Rules

- Jackets must be hung up, even if they drape over the chair
- Only Dutch bar snacks and beers—no cocktails allowed
- Jenever and Berenburg are the sole exceptions for spirits
First visits are free, and guests are asked to bring a small gift on their second outing. The duo have even installed a dedicated stand for hard-boiled eggs—think cupcake rack, but for eggs—and hope to add a traditional Dutch table carpet next.
