Carving out a 2.5 by 2.5 metre corner of their third-floor flat—right next to the washing machine—they created a snug, authentic spot where friends can gather for a pint of Amstel and hearty conversation.
Café Van Dissel: Tradition Meets Quirk
Dubbed Café Van Dissel in playful homage to Jaap van Dissel, Director of the Netherlands National Institute for Public Health and the Environment, the space features:
- Brown laminate planking on the walls
- Heavy drapes for added coziness
- An array of “prullaria” (knick-knacks) for that classic pub clutter
- A dedicated egg holder—think cupcake stand, but for hard-boiled eggs
Strict House Rules
To preserve the genuine brown café vibe, Max and James enforce a handful of simple regulations:
- No phone obsession—focus on face-to-face conversation
- Coats must be hung neatly, even if they’re draped halfway over your chair
- Only Dutch bar fare and beer are served—no fruity cocktails or frou-frou drinks
- Dutch jenever and Berenburg are quietly tolerated for true aficionados
A Warm Welcome (and a Small Obligation)
